Chu The Phat is a 300-seat two-level venue at 111 Melbourne Street, on the edge of the Fish Lane precinct. The kitchen, run by executive chef Brendon Barker, leans into street-food classics with a modern Brisbane spin — dumplings, sticky pork buns, mung-bean pancakes with kim chi caramel, salt and pepper squid, and big shared mains. A full gluten-free menu and strong vegetarian options sit alongside the meat dishes. Bar runs late on the lower level, with a mezzanine looking out over Melbourne Street.
